Roast Capsicum and Green Olive Salad

  Ingredients (makes 6 side dishes):
  • 2 red capsicums
  • 2 green capsicums
  • 2 yellow capsicums
  • 2 garlic cloves, peeled and finely chopped
  • 75g of chopped parsley
  • 10 basil leaves roughly chopped
  • 12 green olives, pitted and sliced
  • 3 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
 
  Method:
  1. Roast the capsicums whole in a 200o oven until the skin blisters.
  2. Put the capsicums in a covered bowl allowing time for them to cool.
  3. Seed and skin the capsicums then finely slice them and put them in a bowl and add the garlic, parsley, green olives, olive oil and balsamic vinegar.
  4. Toss the salad ingredients and season the salad according to taste.
